Matcha-Strawberry-Dessert

In December I baked matcha cookies that, after cutting out and baking, should have the shape of christmas trees you could stack together for a 3D effect. Sadly my dough apparently was a bit too crumbly so the cookies quickly fell apart. (I found the cookie cutters at Søstrene Grene and I am sure with the right dough it’ll work!)
I was frustrated, even though they still tasted great, of course. So on New Year’s I came up with a dessert idea to make use of my matcha cookie fail. It’s a dessert reminiscent of tiramisù with different layers, but let’s not call it that as my Italian uncle won’t be happy if I call it tiramisù haha.
For the cookies I used this recipe by Sliced Ginger. The dessert recipe is my own.
INGREDIENTS
  • 170g matcha cookies
  • 340g strawberries (frozen or fresh)
  • 300ml of vegan whipping cream
  • 450ml vegan yogurt
  • 1/2 tsp. lemon zest
  • liquid sweetener of choice ( I used agave syrup), the amount depends on how sweet you want it to be, I used approximately 2 tbsp.
Let’s start with breaking the cookies into very small pieces. You can break the cookies by hand or put them in a ziplock bag and crush them with a rolling pin for example.
Next, we need about half a teaspoon of lemon zest which I like to make with an organic lemon. If you’re using frozen strawberries, thaw them by pouring hot water on them and let it sit for a few minutes. For the cream layers I used a vegan cream made with soy and coconut and added a few spoonful of unsweetened soy yogurt, as well as agave syrup and the lemon zest. Whip the cream until it has a nice consistency and make sure to make a taste test every now and then haha. In the next step we’re preparing the strawberry layer. Put your fresh or thawed strawberries in a mixer along with some more liquid sweetener and mix until smooth.
And now we can already assemble the dessert! First, start with a layer of matcha cookies. I drizzled some orange juice on top of them to soften them up just a little bit. On top of that pour some of the strawberry purree, making sure you can still see a bit of the green cookies underneath (which I obviously failed at). Then layer a few spoonfuls of the cream. Repeat one more time. Dust with matcha and serve immediately or out it in the fridge for a few hours.
When I ate this dessert I was kind of glad the cookies were a little fail, so that my mind came up with this delicious recipe!
